Test baking soda freshness by pouring a small amount of vinegar or lemon juice over 1/2 tsp of baking soda. If it doesn't bubble it is too old to use for cooking.
Any batter using baking soda for leavening should be placed in the oven quickly to retain the leavening action.
Baking powder substitutions;
1/4 tsp baking soda + 1/4 teaspoon cream of tartar
1/4 tsp baking soda + 1/2 cup buttermilk or yogurt, (Decrease liquid called for in recipe by a half cup)
Yeast:
Equal parts baking soda and powdered vitamin c
Add 1/2 tsp baking soda to dry ingredients in chocolate cake to give the cake a darker color.
In a recipe for sour cream cake combine the baking soda and sour cream before mixing with the other ingredients to activate the soda quicker.
